This “recipe” is very much a way to cut down on food waste because it’s really more of method with basic guidelines. Ever have a meal where there’s a little bit of vegetables left over, but not enough for another meal (or you’re just tired of them)? This is where you can use them!
Or not, you can make this from scratch too. But if you take those leftovers and keep adding them to a container in the freezer, THIS is where you can use them!
So, I usually make a giant pot of soup. Like 6 quarts or more although, once I started, miscalculated and ended up stretching it to 2 FULL 6 quart pots. So it will be fine. For that start I with 1 lb of lean ground beef. I’m sure you could substitute some other ground meat if you wanted…
BUT you want something that does have at least a little bit of fat that you can render out to cook your vegetables in. Begin to brown that in the bottom of your pot. Make sure to let it crumble up. Once you’ve brown your meat and rendered some fat, you’re going to start cooking your veg.
I typically start cooking a bunch of diced up onion and celery, and I mean a bunch! But use what you’ve got (also salt your vegetables as you add them) Part of my strategy is to get as much vegetables into the pot as possible so I let them cook down A LOT because they have a bunch of water in them
Once that’s done cooking now you can start adding whatever vegetables you want (except potatoes yet, wait for that) Frozen leftover vegatables, frozen new vegetables, vegetables in a can, COOKED beans if you want (but avoid ones that have a bunch of flavor added to them) USE ALL THE LEFTOVERS!
This time, I didn’t have leftovers so my soup has -onions -celery -carrots -peas -corn If you use vegetables is a can you can just dump all the liquid from the can in too, but you’ll want to let that cook down for a bit. Salt as needed. Now it’s time for potatoes.
Eyeball how much space is left in the pot and guesstimate how much potatoes you think you can fit. Then cover everything up with Tomato Juice! You can also add tomato based vegetable juice if that’s what you’ve got.
Is this the main source of liquid in the soup? So you let veggies produce the juice while cooking and just add tomato juice in the end and that's it, you never add water at all?
Nope! Unless I’m rinsing out the container to get the rest of the tomato juice (or tomato purée) out of container. If you’re a little bit short of liquid, there’s no shame in adding some water to make things stretch also, if you’re putting it back on to took cook the 2nd (or 3rd, 4th) time…
I needed a little more liquid in mine after emptying a giant container of Tomato juice, but not enough to open another container, so I had a small bottle to tomato purée, so I dumped that in. Now let your GIANT VAT of soup cook until the potatoes are done.
It freezes well, I also like to put the whole pot in the fridge, pull it out the next day and bring it to a boil, if you do that, you don’t have to worry about it spoiling before you’re done with it. If you had more tomatoes juice left offer, freeze it and you can use it the next time you make soup
Why not just use crushed tomatoes? For extra flavor, you can add tomato paste to the frying of meat and veg.
