Just back from Negros Island in Philippines. The feast thing there is spitted roast young pig cooked over coconut shell charcoal. When the pig isn’t too big, the meat is rich like Mexican carnitas but covered with crackling. I understand that’s popular in South too.
Butt is one of the English standard wooden cask sizes. Each had different handling and loading requirements. Brined meat could have been stored in any of them. A Butt-Load is 126 Gallons. Literally. LOL. Pork Butt may have been named for the similarity in proportions.
Wine and water is about 8lbs per gallon. Meaning a "Tun" is 252gal x 8 =2016lbs. Tun =Ton
