Or Mexican. I'd say there's a strong argument for **that** being our biggest culinary failing. It's damn near all Tex-Mex garbage here. It's successful because Boomers eat it like manna from heaven. Hardly anyone else eats it, tho. But the boomers keep these places in $$$$$$$$$$$$$$$$$$$$$$$$$$
If you get out into the small towns of Eastern and Southwest Washington, you can find real Mexican food, the kind of places that serve pickled vegetables as an appetizer, not chips and salsa; or lingua, pastor, birria, street corn, etc. These places aren't very common, though.
Also the lack of Mexican chicken, fried or rotisserie, that is common throughout Southern California and the Southwest Sunbelt states. That would be a welcome addition to our depressing food scene.
