Sure, mayonnaise, but also add: a bit of mustard, finely minced green onion, finely minced/crushed shallot clove... THEN after that's all mixed together plop that into the egg halves and dust it with paprika.

oh yeah, relish mixes well too! Deviled eggs need a KICK. Something that kinda explodes in your mouth with flavor.
