I only just learned about cotija when I read this thread. We get cheddar or we get "tex-mex" blend. Which is cheddar and Monterey Jack, I think? Hello Saskatchewan. (It's probably available now, given the large communities of immigrants we have, but yeah.)

I noticed that terminology split growing up versus living more across the country in years since; in SoCal/Arizona/New Mexico versus Nevada and California north of the grapevine, even as a 2nd-gen American (dad was born here, grandpa was born in Mexico City) we use(d) Mexican not Latin/Latino.

What’s wrong with saying Mexican? Venezuela has arepas, El Salvador and Honduras have pupusas. Tacos and cotija are specifically Mexican, not pan-Latin American (except via later adoption). Certainly there are racists that will spit out the word Mexican as if it were a bad thing, but that’s on them.
