I noticed that terminology split growing up versus living more across the country in years since; in SoCal/Arizona/New Mexico versus Nevada and California north of the grapevine, even as a 2nd-gen American (dad was born here, grandpa was born in Mexico City) we use(d) Mexican not Latin/Latino.
My experience too, but that was so long ago I don’t want to get on the wrong side of changed language.
My Mexican wife says 'Mexican' is fine.
...but also yes, cotija and oaxaca are up there with MSG as superpower food secrets that nobody in the US knows about and 'makes do' with way inferior options.

No way. Cotija is Mexican. If you go farther south it could be different cheese or something Caribbean even. Specific is good.
Yeah, it’s just all a trifle fraught at this moment of American history when ICE is trying to convince everyone that “American” means “white European” and anyone who doesn’t fit that mold gets thrown in a camp.
Which makes teaching real American history all that more important. I emphasize alternative view points and marginalized peoples. I will teach American history this way until they haul me off.

If he's talking about tacos, he may literally mean Mexican. I wouldn't go to any of my Puerto Rican friends for advice about making tacos.
What’s wrong with saying Mexican? Venezuela has arepas, El Salvador and Honduras have pupusas. Tacos and cotija are specifically Mexican, not pan-Latin American (except via later adoption). Certainly there are racists that will spit out the word Mexican as if it were a bad thing, but that’s on them.
The patriarchal assumption that women are there to cook for you is what irks me.
