Record of Lodoss War! It's older, but it's a seminal fantasy anime that contributed heavily to fantasy anime as a genre. Slayers is also older and is peak comedic fantasy anime. The 1998 Merlin miniseries starring Sam Neill was good, and its sequel was okay.
