Definitely a less complicated recipe. The nutmeg and mace are essentials for me. And no raisins/currants. Hate them with a passion.
I'm a 👎for raisins as well. At least sultanas are big enough to pick out & flick across the table. Funny enough, my Mum was very anti-spice (sigh), but the one she would use was nutmeg. Sadly, it never made it into her Welsh cakes.
Nutmeg was always good in them, but adding some mace really enhanced the flavor.
Someone on the radio was saying that if you use nutmeg in your savoury dishes you should try switching to mace for an even better experience. Haven't tried yet.

They taste like iron to me. I grew up picking them out of Welsh cookies. Vowed I would never include them in any cookies I made.
I read this as 'Welsh cockles' which takes me to a whole new level of horror.
