One of my fave ways to have zucchini is sliced in 1/4 inch slabs and grill or pan fry until starting to brown in olive oil with plenty of sea salt, fresh garlic and pepper/chile. I often do up a batch and use it with pasta, in sandwiches, etc. Adding roasted red pepper or Moroccan spices works too.
