It's tricky finding recipes for SE Asian dishes that are in between "Easy recipes for idiot Americans" and "Step 1, purchase a 30lb clay pot and dig a hole in your background to bury it in" levels of difficulty.
And too many tofu recipes start from the assumption that I don’t like tofu. I like it a lot! It’s a clean and delicious base for just about anything!

Marinate it in symbal and soy sauce (the longer the better). Then air fry it
Easy. Brine overnight then freeze. Defrost and press out the water. Cut, bake and toss in sauce of choice. It will absorb the sauce perfectly because of the "spongy" structural change when freezing. It gains a texture similar to chicken nuggets.
