Earl Grey was my favourite, for over 20 years, didn't have any other variety until I discovered I was allergic to citrus, oh well You could also claim it unfinished. Who will want it without a base? They should hand it to you & start again. Keep your eye on this guy, you could be on to a winner

My recommendation, don't mix it that much so you don't put too much air into it, it must be creamy, but not foamy

My best guesses based on general experience: it won't stick to the pan and doesn't burn too much the edges. The air between the pan and the dough acts as insulation. Crumpled specifically because it makes it easier to put it inside the round form.
Also, it gives an extra homemade look to the sides, I've made the original recipe (without the tea and sauce) a lot of times and it's delicious.
