The Chateau Theatre in Rochester, MN when it was a Barnes & Noble in the 90s.
Mexico in Epcot is also pretty high up there, but either way what I really want are public tours of that wild Las Vegas bunker house.
They really missed by not painting trompe-l'oeil fronds on the ceiling.
Feels like a Vegas thing, I know the Venetian but maybe a few others have that "supporting pole disguised as a tree" right into an endless fake sky look.

Do planetariums count? There are many, and they are nearly always pretty.
Similar grey area: Nocturnal mammal habitats in zoos. The sandcats at Brookfield (Chicago) come to mind as a good example of the type.
