VFD FTW ! Here is a front of my PC. VFD spectrum is ready bought from Ali, but VU-metter, that I took from Denon cassette deck, adapted everything for it to be powered by +5V. RGB matrixes - powered by ESP32, using open source "WLED".

I did check, that very particular seller does not exist anymore, but products exist, search for "AK2515 Audio Spectrum Analyzer VFD Sound Level Meter". Also, look around, there are slight variations, see what's more tempting to you by features, visuals. Random example:
