I mean, it depends. There are some methods that use elaborate contraptions that you fill with ice and let slowly melt and drip into the grounds like the world's slowest pourover. But yeah, you can get decent cold brew by filling a French press with coffee and cold water and chilling it overnight.

Maybe I'm thinking of something different, but I thought Vietnamese coffee was just pourover made in a cup that has condensed milk in it.
Hmm in my memory there's ice in the cup tho (and yeah, condensed milk at the bottom.) but it's been too long.
Yeah, you can do it over ice too. But with the cold brew tower, the ice is in the top. The coffee brews as the ice melts. It can take hours depending on the ambient temperature.
