I think two sets of tokens, one symbol per player, white and black backs. Shuffle face down. Players take turns taking one black and one white, which they check. If they match: keep one, redraw the other, and shuffle. Flip a coin to decide white or black; everyone flips that color as their symbol.
Players don't even know which symbol they are until the end, so it's hard to game the pick.
