I recently discovered Walmart's "Light Tasting" olive oil is terrific (for some reason. Who'd thought?). It's organic olive oil produced in Italy. It's only $5.94 for 17 ozs.

I once adlibbed this as a work metaphor. My boss asked about how a project across multiple teams would work out, and I went with, "I think we're gonna end up with a big pot of whatever's left in the fridge."
Honestly, I expected more random ingredients. Where’s the last slice of sandwich meat? The leftover Chinese delivery? A jar of capers first opened in 2018?
I think there's enough material that someone could make a book about recipes that arose from fridge clearing. Isn't that where Puttanesca came from?
I absolutely love improvised meals. If I may: rather than final toss in a bowl, maybe 1 Tbsp of oil back into the empty pot with the garlic, shallot, and cherry toms for a few mins, then add a cup of pasta water. Stir. Add in everything else and agitate while adding the cheese. Cus the sauce
sounds delish. I'd personally leave the cherry tomatoes whole because that satisfying crunchy pop when you bite into them is so satisfying.

One of my favorite things to throw together. Last week I added corn scraped from the cob and feta and that was amazing with the basil and tomato.

Doubt not. Or fry the garlic ahead of time if you want. The shallot and garlic give it a nice zing
We do something similar all rhe time...usually spinach or arugula and maybe one other veggie, evoo, and parm and cracked pepper. My "go to" when I don't to cook.
These are my favorite meals, and the best is when you create a ‘keeper’!
