I've had to give this show a couple of tries. The animation is amazing, I really like some of the characters, but I'm just not sold that it's a great anime.

Sure. The first 24 episode season is largely more-so building. What really sold me on JJK was Jujutsu Kaisen 0 and Hidden Inventory/Premature Death. It really sets the stakes for the powers that are in play.
