
I am mystified as to why the bird flu has not led to the sharp increases in egg prices here in Canada that we are seeing in the US. Clearly the US is doing something differently that makes its flocks of egg laying hens more vulnerable to that flu.

Supply management system. We pay more on average but price changes are smoother. Also, and I think likely more critical (but I’m no farm scientist / economist), average egg farm size is much smaller at 25,000 birds in Canada vs. US farms which can be staggeringly larger, some in millions.
