Starship fabricator on Space Stations allow you to change the sail color, including white and grey (or weaker white, i guess). You will need to strip other solar ships for parts first though. Solar ships are abundant in pirate systems.

Thanks! I have been trying to find a white sail - keep finding green and red. i won't stop till i find one even if i have to start nagging hellogames lol

Echoing the other commenter: you may want to buy 3 other solar ships to dismantled to build your own (cockpit+wings+sails) for specific colors. When you fabricate your own ship, you get to choose new colors, so you can make the sails white & the body pink/blue, or whatever colors you're aiming for.
