Based on what ive seen with my researach at their level of ripeness (soft with lots of brown/black) they should have a pretty sweet flavor. The very starchy, savory taste is when they are more to the green
ive never tried plantain bread myself but if dont already freeze your bananas for banana bread you might wanna try that here cause itll burst cell membranes from the water expanding and may help you get a smoother texture
I discovered they were plantains when i went to freeze them xD I ended up freezing them anyway, much with what you thought!
Can you pass them through a sieve?
They are soft but not quite that soft, and id much rather wash a blender than a sieve/wire strainer, but that is a great idea!

You might want to also consider them as a potato. Perhaps you can make plantain fries.
Because these are into yellow and nearly brown/black, they actually are quite soft (softer than a firm banana but definately not as soft as a soft banana) I don't think they work great there! If the bread doesnt turn out, i'll like just cook em up normal like xD
