A big difference is that I've noticed a lot of FS tend to have issues with online play and servers on launch, which is far less of an issue for anyone playing single player. In this game it's required so any online issues will be baked into the game experience for everyone.

I just tried Balatro and an understated feature is that the game allows for multiple save profiles. If someone in the same household wanted to try the game they could do so without resetting my progress. Why do more modern games not have this? Old games used to.

Polish might not be the only factor though. An element of DA that put me off was feeling like some of the choices I made in DA:O were invalided (in my Playthrough a particular character died that is canonically alive). The game having more polish/better gameplay doesn't remove that criticism.
People can have very legitimate reasons for not liking it. I don't, but then again I also didn't like 2 and didn't play Inquisition because of how I felt about 2. Reasons for not liking it become so much more legitimate when it's a sequel as well. It's being sold on the hype of prior games.

There are ways for devs to design organic-feeling paths without bright yellow lines. Plenty of games do so easily. There are plenty of small/hidden tricks devs can use to guide players to specific places or discourage them from going elsewhere.
I don't mind a game being long but it has to be worth it. I don't want 300+ hours of mindless tedium to play maybe only a few hours of fun. Besides I feel a lot more modern games take longer to really get into the core of the game now.
There are some games I love to watch but have no interest in playing, but there are plenty I love to play but would find so boring to watch. Some games can just be enjoyed in different ways like that I guess.
