Honestly, it's probably the case that if you were designing a course shell from scratch, it would be okay. The problem is trying to transition a course from the old UI to the new one, because you made specific design decisions that make less sense now.
Hmph, the number of emails I've sent our center for instructional technology this week has been... high. About a 50/50 mix between "Yes this works fine once you find the right setting" and "No you can't do that anymore."

I love oral exams! I use them whenever I can. I also have 150 students in my intro class.
Their parents are paying a lot of money for it. Them, not so much.
I am tempted to show this semester’s students the data. “My spring class used LLMs. They averaged 57% on exams. Do you want to average 57%?”
I had the class from hell last semester (dramatically worse than any other class I've ever had, including through covid). I'm hoping it was just a one-off, but definitely got some dread as I'm doing my syllabus today.

I do know of a specific case recently of a university refusing to submit a grant to study breast cancer for fear of triggering retribution because it was only going to recruit women as subjects.

My one use case: helping practice an uncommon language I am learning. It doesn’t need to be correct about content, it just needs to respond plausibly. That’s exactly what they’re good at! I have yet to find a second use case.
The only reasonable use of LLMs is when it’s fine if the answer is wrong. Those use cases exist, but apparently not what people typically do with them.
My grandfather took a course from him in university and would always talk about it.
I don’t think there’s anything prohibiting him from doing whatever nonsensical count he wants now and calling it a census as long as an actual census that counts all persons happens in 2030. It wouldn’t have any legal status wrt redistricting but might have propaganda power.
