I’m really enjoying my early morning walks in Wales. The birds, squirrels and sheep go about their day ignoring me as I bask in the same pale sunlight and my hair curls in the same musty shower.
Sounds wonderful! We have moved to a rural part of Wales so it’s birdsong instead of bells. But it was my favourite part of the Ribes morning salute…the church bells! Good memories!
Ours was a red and black bean casserole that I’ve been making for a decade or two! Made enough for two growing children and my parents! I serve it with a coriander lime laced Greek yoghurt cream and corn chips. I try to scatter coriander leaves but rarely manage to!

I’m guessing rosemary prefers quite sandy dry environments (it’s on limestone here) and there is a definite season for it too. It’s currently in flower. So it’s more of a spring herb. Thyme is tricky! But it’s reviving at the mo!
How lucky you are! I can collect rosemary and thyme on my dog walks and I really value that.

It’s the sweetest moment! My best friend from school came to visit my toddler twins & I was able to watch, in awe, as my daughter sat on her lap and drew with her. The quiet time they spent together, doing what they both love (my friend has always been good at art), is burnt into my memory!

I do make puddings. But I often find the trad ones too filling after a slap up meal. And we don’t need them. (!) Anyway I think they take up a lot of time and aren’t as popular as they used to be. Am I wrong? Weird to even talk about steamed puddings in August!

I love salads! I have to put the tomatoes on a separate plate in our house as my son is not a fan. But I thinly slice them and adorn with salt, oil, shredded basil. I regularly add a nut or seed to my leaf salads. And I mix up the dressings. Salads are awesome!
Frankly the price should be prohibitive for all Americans! And they can blame Trump!

It is increasingly more expensive to live in Catalunya. Having lived here for 20 years and we are leaving (for family reasons, not fiscal). We have noticed our monthly outgoings have increased exponentially. Renting for non Spanish residents is also more expensive.

Pasta con le zucchine - made it on Saturday! It’s comfort food at its best! Don’t tell me squash is bad. It takes up lot of room to grow and an insane amount of water but the recipes are endless and phenomenal! Suppose you feel the same about eggplant?

OK. So, got the pellet smoker (wound up with a Traeger) and looking for a few recommendations for easy starter recipes to try.
1.Tarta De Santiago 2. Chocolate Mousse 3. Pavlova 4. Crema Catalana 5. Fresh seasonal ripe fruit such as cherries, peaches,melon and so on. One variety at a time.

As a mum of young ones…I am glad you didn’t. Spanish people are regularly wearing Ef bomb T-shirts and they play un edited songs on the radio so you end up hearing it in the supermarket! Multi lingual kids…Pah!

Olive oil is nectar of the Gods! Next time look for extra virgin(the tastiest imo), in dark glass. (Or pour it into dark glass when you get home) keep it in the cupboard rather than near the hob and it will worship you each time you use it!
When I lived there it was reserved for steak & burgers. Get creative & see what you enjoy with it! 1 year my brother smuggled Stornaway Black pudding over to us here. He also brought HP (request from hubby)! We diced up the pudding (think pinxos) & put the sauce in a little cup for dipping! Magic!

I make butterflied mackerel with paprika- utterly delicious & ridiculously easy! Just put 2 Tbsp oil in the tin, heat it on the hob then add fish skin side down, season with pepper. Put in 200C oven for approx 5 minutes. Remove to plate & sprinkle with Paprika & flaky salt & drizzle with more oil.
So jealous! I can’t get rhubarb here Paul. I’d love to know how you made the sauce!

Watching Marvel series with my kids this summer. All the series are wonderful! But my absolute favourite is Ms.Marvel. I love the music, the family, the love, the cultures! It’s really beautiful!
