It's literally just chopped and simmered rhubarb! Some people would add brown sugar, orange juice, butter, whatever - but often I just want things as fresh, simple and natural as possible. Picked that morning and on the plate for lunch.

I make butterflied mackerel with paprika- utterly delicious & ridiculously easy! Just put 2 Tbsp oil in the tin, heat it on the hob then add fish skin side down, season with pepper. Put in 200C oven for approx 5 minutes. Remove to plate & sprinkle with Paprika & flaky salt & drizzle with more oil.
