I'm not a *fast* cook and I am working on things like timing, so that things come together pretty well at the end, especially if components won't hold up or stay warm til dinner is plated and served. It took longer than I expected, but my Cottage Pie is assembled, topped, and in the oven.
Tonight's dinner was Italian sausages with red and green bell peppers and red onion on toasted garlic low carb buns and some Dijon mustard. A caprese salad on the side.

Today is my 2 year anniversary starting HRT! I'm so much happier. It's been slow going but more recently I just see the woman I am in the mirror finally. I look at my body and I am not ashamed anymore. It's finally me. HRT and gender affirming care saves lives.
Last night, I took on the French meal. I made pan seared roasted duck breast in an orange-rhubarb white wine reduction sauce with haricot vert almondine and the rest of the Pino Grigio to drink. More effort and new techniques and ingredients to me. So delicious.
I still have to make this French duck breast meal that is new to me. I need to do laundry tonight, too. Boyfriend needs breakfast in the morning. I think I can make him another Canadian bacon egg and cheese sandwich and then batch cook breakfast burritos for us for a week after he leaves for work.
Had leftovers instead of the French duck breast meal last night. So it's tonight. We didn't grocery shop last weekend and I went alone and shopped in-store today. I didn't know where things were. I had a list. 2.5 hours and mild panic attacks later and I was back home with food put away.

Lab results from Tuesday are in my app and looks like my hemoglobin a1c dropped from 6.7 to 6.3. Adding walking days in between gym days and the additional morning metformin are bringing me to non-diabetic range! Also I am negative for HIV and syphilis and all the hepatitis letters. Get tested!

Some stuff I cooked lately: chicken enchilada soup, veggie egg bites (better than Starbucks and low carb) with garlic and red pepper avocado toast, "Greek" seasoned burgers with tomato and feta and tzatziki sauce and sweet potato fries (mayo dip). Also whiskey because it was our 3 year anniversary.

Apparently Spironolactone makes me crave pickles. I have loved pickles for the last two years of HRT after having hated them for 40 years. I read this is very common for trans feminine people on HRT. I am a pickle friend convert lol

I hear about mom anxieties and I too have plenty of my own anxieties. We're trying for a pregnancy and I'm anxious of course that it will double my struggle 😅 but I'm doing so much better and I know how to manage when I'm not doing well. And I have an amazing boyfriend and support. So... hopeful? 😊
