Milk Street did a recipe for focaccia that is most like the focaccia I had in a hill town in Italy in 1985. Bakery only made it on market day to sell in the town square. Best news:it’s a very wet, mostly hands off, dough. Start in the morning, bake it for dinner. Have plenty of olive oil to make it.
