Italian-American is a bit of a special case because a non-zero part of getting yelled at for ordering alfredo in Florence is a denial of the very real impact America has had on the Italian food you find in Italy.

You can probably make a case that Italian cuisine has three distinct time periods: pre-Columbian, post-Columbian pre-war, and post-war, with the vast majority of what we understand of it, even in Italy, to be pos-war cooking.
