They're nice, but they really kinda fuck with the pacing. Only thing that really shouldn't have been cut imo was Saruman's death.
Oh also they screw up the reveal with the ghosts on the ships.

I do love the extended opening, with Bilbo's "concerning hobbits" introduction, and cutting Saurman's death from the opening of Return of the King but otherwise the theatrical cut is 100% better and I have yelled at people for introducing friends to LOTR via extended editions.
Some of my favorite scenes are extended edition only Boromir and Aragorn first meeting and Frodo and Sam looking at elves leaving middle-earth come to mind
