Good luck! We took our kids to Europe last year (for my 40th to see an f1 race) and it was a lot of work but very fun. I will say for kids Paris kinda sucked. Very big and busy. Other than Disneyland Paris. It is pretty far away though.

We're doing Disneyland Paris for a single day as a reward for them being adventurous. (Two nights, one day, I guess.). But yeah, the vast majority of the trip is Paris bc it's always been my wife's dream. Noted!
Your experience will probably be much better than ours as I did just remember we were there between the Olympics and the Paralymics so lots of things were blocked off. Just make sure you have things well planned out as it isn't a great "find things to do" place with kids due to its size.
Oh and eat all the bread. European bread is so good.
Just be sure in London and Paris that if you see a bathroom then make the kids use it. So few public bathrooms. Oh and have money for them as most are pay.
