I got lamb on sale at Costco on Tuesday, and today I cut up two boneless legs, about 9 pounds. I made most of it into coconut curry for the freezer, but it didn't all fit in the pot so I froze some uncooked for later recipe determination. I'll freeze the curry in 1 and 2 cup cubes.

For a long time I thought I didn't like lamb, but I figured out whatever I don't like is in the fat, so trimming most of it off is the key for me. Sometimes I buy the bone-in ones, cut off what meat I can, and then pressure cook the meaty bones until the meat falls off into a ragù.

If you really wanted to go for a 12-18 month journey you could look into curing a leg to make some lamb prosciutto.

Doesn't look too fancy or pretty but it was delicious. Best part of big batch cooking for the freezer is that at the end of the afternoon, supper is also ready.

Going to put two full meals' worth in the freezer as well as four smaller cubes that can be combined with same size of butter chicken for a more varied meal like a thali. I also have cubes of chickpeas in sauce as a side.

Here's the frozen lamb curry cubes. I put them in Ziploc freezer bags after I took them out of the silicon trays.

Freezing cubes of leg of lamb works fine. I buy same for kebabs and freeze in 1.5 pound portions.
