I’ve always assigned lots of writing in my classes. Writing forced students to read, think, and make arguments. But this year I’m thinking of something different: 100% Socratic method. No papers. Just discussion. Grade based entirely on participation. Am I crazy?

You can always go the good old fashioned blue book method. But in reality AI is here to stay and they will need to know how to integrate it to be ready for jobs. I recommend building it into your teaching so they can learn to use it as an enhancement as opposed to a crutch.

100% participation? I don't think you're crazy but I do think there are two areas of concern:

1) Introverted students will inevitably score lower. If you score on % of total class participation, these students will be unfairly punished. I strongly suggest you curve the participation portion by how difficult you perceive the participation was for the given student.

I suggest a short writing assignment (5p max) with a threefold focus: argument construction (60%), prose style and flow (20%), and applicability and usage of specific examples (20%). Each is 'hard' for AI, and harder still if the chosen topic is highly esoteric material from your course.
