"Flash pasteurisation" is just how we pasteurised milk which I'm pretty sure it's the industry standard here. It's (apparently) the best compromise for killing the most bacteria while denaturing the fewest proteins.
Ultra pasteurised is not a term I've heard, but UHT (ultra heat treated) is a process you see hear, but you get very shelf stable milk from it, it's typically used for hospitality like hotels etc. I thought it was longer than 2 seconds, but I'm not personally familiar with it so I can't be sure.
Not sure if you use the same terminology as the US, in case you don't: vat pasteurization is 63 ºC for 30 minutes, flash pasteurization is 72 ºC for 15 seconds, ultra-pasteurization is 138 ºC for 2 seconds.
A lot of organic (US equivalent to bio) milk is ultra-pasteurized for logistical reasons, so many people who try raw milk are comparing it to homogenized ultra-pasteurized milk.

Yeah, I know about vat pasteurization because it's better for making cheese. Raw milk advocates talking about vat pasteurization as the lesser evil is new to me.

I know you're probably sick of it, but just to be clear, in terms of nutrition, raw, pasteurised or ultra pasteurised have basically no difference in nutritional value, it's purely a taste/texture difference due to protein denaturing. The protein is still in there though.
I could not care less, I don't drink milk.
