Blue: you own that exact printing/treatment. Grey: you own a copy of that card, but not in that treatment.

Blue means it's the exact copy in your collection (edition, foil, langauge); gray means you have a card in your collection but it may not match the exact type. I have a foil Urza's Legacy Rancor? It shows up as blue. If I lack a non-foil and it defaults to non-foil, it's gray.
Thanks for the quick answers friends. gray = own blue = you own this exact copy Follow up question. If I'm always adding the exact version to my collection, foiling, etc, why would it not always show up as blue? Why is it blue vs gray sometimes?
You can set an entire deck to "Preferred Printing" all at once.
I believe the default search pulls the least expensive printing, but there is a setting to change that to default to cards you own
ooooooh, I keep manually clicking "use this version as default" on every card I add separately. That setting would be HUGE.
Selecting 'Search only my collection' should do the trick i believe
Settings -> Preferred Printings -> This Option will import your collection as the preferred printings for everything you own.
