While back when I was a chef, pastry was big into putting shit into small cups and doing coatings like this, although not the whole dish. I wouldn't allow it in my kitchen. Someone has to wash those things, and it's not the creator of the dish.

That was my first thought after washing dishes for 5 years in a kitchen. If I got a job at that place and saw cups coming back looking like that I'd quit unless they had something special to get it off immediately. Also, its going to clog their drains so fast.
