Vault 13 is a particularly funny one here because a major part of their "experiment" was they ran out of the ability to produce potable water.

Now in fairness, Vault 13 is the main vault in Fallout 1, and the whole Vault-Tec human experiment angle isn't really a thing until the later games, and was kinda retconned in re: Vault 13. But still, I hope this coffee shop keeps their water chip in good working order....
