I am pretty sure that is the Afghan version of plov. Had plenty in Uzbekistan last year. But an Afghan refugee who settled here 20 years ago makes plov just like that. It is delicious.

I have had Afghan food exactly once over a decade ago. It still lives in my memory as one of my favorite dinners. Basically impossible to find near where I live now and it breaks my heart. Absolutely delicious food. I’m jealous.

And people say migrants refuse to integrate into the local culture. If I moved to a major city, I'd have to be there for DECADES before I managed to shed my prejudice that "pop up" restaurants/shops are egregiously pretentious bullshit. These guys held their noses and dove right into that shit.

And please, if you're going to come at me, defending pop ups, MAKE SURE YOU CAN IDENTIFY AT LEAST THREE ADVANTAGES THAT A "POP UP" BUSINESS HAS OVER TRADITIONAL FOOD TRUCKS, CARTS, STALLS, ETC. I can only think of one, and it's marginal.

When I was in Afghanistan, the hospitality and food of the local people was always phenomenal when locals didn't fear thug & Taliban retaliation. The time when we could patrol in our greens was legit a big cultural exchange. There's reasons why even after the ambushes started, it didn't end.

You should try other Afghan food. We have a lot of Afghan restaurants in Istanbul and they have a rotating menu of some really delicious treats 🥰
