Yeah I always assumed the Jedi uniform would be more like the black outfit Luke wears in Return of the Jedi when he's consciously trying to look like a Jedi.
The figure called it his Jedi Knight outfit but I thought it was meant to be showing his slipping to the dark side
I think the retcon reason was all the Jedi wear poor farmer clothes because they’re humble and don’t want to wear fancy clothes. It’s a shame, I’d have liked to have seen proper full-on jedi outfits.
The samurai robes are in the pre shooting design notes. They added some fake wear and tear to Alec's silk (apparently cost a lot but George was adamant) finery to make it like he was someone special but he's been there a while

Ok, so I looked in the gorgeous original trilogy costume book I've got and as I suspected, ObiWan wasn't in disguise, because no one had thought the Jedi might be hunted or even that well known as far as Tatooine at that point. His robes are the full Jedi samurai inspired outfit..
So it's just coincidence/lack of imagination/budget that so many characters have similar clothes. Luke wearing black in Jedi as I thought was him leaning toward the dark side. It's still got the Jedi cut, just not as noticeable once he loses the cloak/top layer..
But an extra spanner in the design consistency works is Luke's "Battle gear" or Bespin Fatigues. Why don't more Jedi wear those, they're by far the coolest outfit he has.
The unanswered question, though, is his does Luke get changed in the cockpit of an X-wing?

I think we need to understand that, once he left Tatooine Luke's stylist was the rebellion. Including the Bespin threads. It wasn't until between ESB and RoTJ that he had time to construct a new lightsaber and pick his own drip. Remember also that the original name for RoTJ was "Revenge of" so black

I guess it was Yoda's clothes in Empire that semi-reflected Jenobi's attire. The mistake began afterwards when for some reason they forgot the original reasoning for the robes. Dictionary Who has a similar ongoing gaffe with Gallifreyan robes and headgear.
it was taken from the samurai tradition, where the idea was to dress as plainly and simply as possible out of humility. they dressed like simple village folk and farmers, rather than the other way around.

I don't think there really is in this case. From the start Obi-wan's robes are Jedi, it's written in the initial design that helped convince Alec Guinness to join. The confusion is Luke wearing what he likes and the low budget scifi not making more elaborate costumes for everyone else.
