yeah there's a place in kyoto that makes original fortune cookies still, was neat (modern) sushi became popular because of the US' food ration policy after WW2. before that it was just a tokyo fast food thing fun challenge if you're bored: find a "traditional" japan thing that predates meiji
It's been a minor crisis that trad regional soy sauces are going extinct in favor of the style that was adopted by the IJA because the fewest conscripts objected to it
i love hunting for weird soy sauces/vinegars/misos when i'm in japan
I would love to try Nagoya misokatsu some day but I can't find hatchΕ miso in my county π
it's good. if you can get a strong akamiso it's not the same but it's pretty close, it'd be worth making
