That's what I personally am going with, albeit a lactose free smoked one, cuz they don'tale lactose free American/Cheese Whiz. However, I'm also making them for a group of people, so if the other two were better I'd use that for theirs.
I sometimes use a little mozzarella under the provolone to give it a bit of a satisfying stretchiness, but I know that's not traditional by any means
