I don't think the Mormons have ever been particularly vegetarian. Also, I suspect they were very little known in England in 1950s. I wouldn't be surprised if Lewis had heard of them, but I doubt most of his readers in England would have.
I guess too that Eustace is described as going to a school that is unusually lax, and overly progressive and this wouldn't be a likely choice for a fictional Mormon family.
I was thinking about that as I read more. Especially since it doesn’t really jive with how Arthur Conan Doyle described Mormonism in The Sign of Four, which is my understanding of the British understanding of LDS!

Oops, it was A Study in Scarlet. It surprised me too! I think it’s considered one of Doyle’s weakest because it doesn’t play fair. There’s really no way for the reader to solve the mystery themself.
