I make it with smoked bacon which is probably wrong but I love it.

I don’t have ready access to Andouille sausage here, so I have to use smoked Chorizo. If you like it, that’s what matters!

Completely understand! I am planning on making some when I get a smoker, and plan on using a finer ground than Andouille typically uses for similar reasons.

It’s really hard to get some things in AoNZ, and andouille sausage is one of them. I’ll have to make it myself if I want to get it reliably. (Dried beans is another one, usually have to go to a specialty market to get them)
