in my household growing up, we thrilled to dad’s bolognese week and the bounty to be found in the overstuffed freezer
For us it was the Huge pots of Spanish Rice or Mac n Cheese w/ sliced up Hot Dogs. Both kept well in old plastic Butter tubs in the fridge for days.
And what’s especially great is when you make so much that you can freeze some of it so that on a day when you don’t have time/ingredients/whatever you have bonus chili!
My Husband will use all parts of a Roasted Chicken for many many meals. We pick it clean, make sandwiches or chicken salad. The bones are collected and eventually end up part of stock. Love one meal becoming many.
I am also a fan of spaghetti week.
This and also a big slow cooked roast, for me!
And it gets better multiple days in a row.
Gumbo is 100% like that. Make a huge pot, pretty damn good that first day. But the next time? And the next? It's incredible.
On the last day when there’s not quite enough, it’s chili nacho night.
I can also recommend pouring it over a baked potato.
Tater tots too, if you feel like being extra. Hell, I'll put it on spaghetti.

And there are so many things that you can do with chilli. You can make chilli dogs, you can make a chilli sloppy Joe, you can throw some chilli over a bowl of rice. You can throw chilli in a burrito. Or you can just eat that goodness straight out of a bowl. I love chilli so much.

My go-to move to shake things up is on day 3 of chili week I add macaroni and velveeta to the chili in the instapot for 10-12 minutes and make some great chili Mac.

My picky-ass teen doesn’t like chili, so I have to make do with crock pot black beans (smitten kitchen recipe, natch.) I’m thinking about gradually making those beans more and more like chili until one day he realizes that chili is good

Oh man, I used to make a giant pot of chili once a year, but now I'm married and have children and I'm the only one that likes chili. So I miss chili week. I don't like hot dogs, but you better god damn believe I made awesome ass home made grilled chili cheese hot dogs at least once that week.
So make a giant pot of chili & freeze most of it in small ziplocs so you can have a serving whenever you want.
Also, after freezing, you can freeze-dry it too. Lasts way longer, feels tastier, holds nutrients better.
Frankly I don't have the energy to make myself a meal and my family a different meal. I'm doing good enough getting my kids fed at all.
Understandable. I will just say that my chest freezer paid for itself within a year by reducing food waste, allowing me to batch cook a dozen portions of half a dozen favorites, make a six months worth of things like roasted garlic, caramelized onions, & ginger paste, & a bunch of other things

My wife made world class pork chops last night. I'm making a steak dinner with mashed potatoes, sweet corn and chocolate mousse for us AND a friend tonight and there's no WAY it cost $60 and no way it would cost less than $60 at a restaurant. These guys are insane.
Where are these folks getting $8 rice bowls?? I went to the closest normal seeming place next to a worksite a few days ago and a shitty salad with decent falafel was $14
I don’t tend to make meals that last weeks since I’m not good at meal planning. However I am good at cooking. I did make some vegan white chocolate covered strawberries for a friend whose family lost their cat recently and I am proud of how they turned out. I wish I could do vegan chili week

I frequently make giant pots of stuff, and I’m frequently excited about it, even though it does in fact cost me $100. But it’s a giant pot of delicious food I can eat at any moment. But I must ask you all this:
…imagine killing a cow, tanning the hide, cutting it, dying it, sewing it, and stitching in a rubber sole and and decals, boxing it, shipping it across an ocean, to a store, and selling 2 shoes for $100. vs I bought chicken breasts, noodles, broth, and celery and milk for like $60….etc. lies.

We have started freezing/vacuum sealing soups/stews/chili and it is the gift that keeps on giving. Just revisited a corn chowder from last fall that lit my brain up like Proust's madeleines
As a guy who just this very week made a huge pot of chili with which I will sustain myself over the course of multiple days: Hi.
I have two leftover dishes full of sloppy joe leftovers in my freezer and I love being able to decide to eat a couple of sandwiches from those leftovers on a whim.
We do chili week and chicken noodle soup week (but you goot keep the noodles separate!)
The biggest thrill is putting some away in the freezer and then a month later....BOOM! Surprise already cooked chili just needs reheated!
When I’m making a soup, or a slow cooked stew, or something of that ilk I will on purpose make more than we need so we have leftovers. These chuds are on a different planet and I wouldn’t even stop there for a layover.
