it's not fully automatic but i've settled for a slow cooker on low and getting up to stir them every hour when i'm getting another water. it takes all day, but it's pretty low-effort

I miss my slow cooker. The instant pot just doesn't work as well.

I wonder if i could get the same results using a braising pot in the oven, but i can’t test that until it gets cold

That's how I do mine. I understand @byharryconnolly.bsky.social 's wife's assertion that it isn't the same, though. It helps that I use a broad, low, cocotte style pot instead of the more typical upright dutch oven.

I've tried it and it's not the same. At least, it wasn't wife-approved, which is the only standard that matters.
