Made some Chicken Enchiladas for dinner tonight. (Unbaked) My son is visiting tonight to tell us about his vacation. Iām living a bit vicariously thru him bcuz we canāt travel for so many reasons. Always a treat when I can see my sons. Servings it with Mexican rice, refried bean & chips w/ lemonade.
