Feta's delicious with watermelon, but I'm not sure about the mozzarella. Also, don't make the salad until shortly before you're ready to serve. I made a cucumber-feta-watermelon salad the day before a picnic once & it juiced up so much overnight that it was completely ruined.
Feta, yes. Mozzarella not needed. Just the feta and some balsamic drizzle.
i'm not sure i would want both cheeses - but either with the herbs you mention will be delish! (texture-wise, i would err toward feta. mozz + watermelon could get quite watery.)

honestly its buffo. Good balance with feta and red chili, lime and Sicilian olive oil. Purple basil and mint from garden.

Oh, dont be afraid to dress it with a little extra virgin olive oil. It goes really well.

Yeah, the spicier the better IMO. A quality Spanish oil would be a good fit.

May I also recommend diced seedless cucumber in there as well? We just did something like that for the fourth and it was dynamite.
No. Reject the cheese. Use fresh mint and a bit of lime juice. You won't be sorry. Save the feta for Greek salad and the mozzarella for caprese.

Sounds good, but hold the watermelon. I'd happily take that cheese combo served in a half canteloupe or honeydew tho.

I'm skeptical, but I've been wrong before. If it doesn't work, my sales pitch for a summer salad is panzanella. Don't get me wrong, watermelon salad is good, but you could build a career as a demon on the number of people who would sell their souls for panzanella.
