I tapped a yellow birch once. I couldn't believe how much sap it gave. I used it as the liquid with a malt beer making kit. It was great!

Went to a day camp as a kid. At the end of summer they'd get us wooden barrels of this. It's definitely not the same now but man was birch beer my favorite!
