And not every pudding is an emulsion. Thus having demonstrated the negligible impacts of the emulsification of the substance in question we can safely set it aside and focus on the fact of that mayo is pud.

I take your point, however puddings aren’t condiments. Mayonnaise is not intended to be enjoyed solely upon its own merits. It exists to enhance the ensemble. A pudding is itself an assemblage of ingredients, wether emulsion or not, which constitutes a whole culinary experience. Mayo is not a pud.

I will make mayonnaise with the deep and full intention that it is enjoyed entirely on its own merits, and I will call it pudding.
