I take your point, however puddings aren’t condiments. Mayonnaise is not intended to be enjoyed solely upon its own merits. It exists to enhance the ensemble. A pudding is itself an assemblage of ingredients, wether emulsion or not, which constitutes a whole culinary experience. Mayo is not a pud.
I will make mayonnaise with the deep and full intention that it is enjoyed entirely on its own merits, and I will call it pudding.
