idk a lot about the specific needs of video editing software but my inclination is that more RAM and a better graphics card would get you the most betterer for your buck

I've currently got 64GB of DDR5 which I feel like is plenty lol. But my GPU is a 2080, which I guess I should probably upgrade. Though I've read a new CPU goes a lot further than a GPU...
depending on what kind of video editing you do, you may want to look for a CPU with an NPU in it; as well as GPU offload for a lot of filters there are now some effects that can use the NPU for acceleration
It's nothing too heavy. No 3D or animation or anything, just video essay style stuff. But the videos are fairly long (usually at least an hour)
in whic case as much high-speed multichannel DDR 5 memory as you can afford, as much GPU VRAM in your fastest internal PCIe slot, nice big fast SSDs for storage, maybe extra cooling because it's going to do long runs
Awhile back I looked up the minimum required RAM for video editing, and bought twice as much - 64GB of DDR5. Do you think I need more? I also have: CPU: Intel Core i5-12600KF GPU: GeForce RTX 2080 Motherboard: Z690 AORUS Elite AX LGA 1700
I'm not particularly up to date on specific hardware alas; I'd check if the video tools you use have a list of optimsations like this Neat one, which has some utilities that might be useful for checking your current system
The i5 is the bottle neck in your system. Video editing still relies very heavily on the microprocessor over the graphics card. After the CPU, memory helps the most for video. As for the CPU, the more cores the better. I use AMD but I have heard that Intel's slightly better for video.
Thank you!
