Wow, rice soup, that sounds intetesting! Is that an Italian dish, I've not come across that at all?

Very very Italian. Some families use pasta, mine used rice.

We call it Grandma’s Rice Soup, but my Mom says it may be called Straciatella It is comforting & thick. When you spoon it into bowls, add more parm cheese on top.

2-3 quarts chicken broth in saucepan over med. heat,add (cup - 1 1/2 cup) dry white rice. After 4-5 mins,add one box of frozen spinach to pan (stir).Cook 5-6 mins. covered. Add a beaten egg & stir. Cook 5 mins covered & add 1 cup grated Parmesean cheese to pot, gently stir.Shut heat. Cover 5 mins.
