Unfortunately, at my institution at least, some majors are required to take multivariable calculus but not linear algebra, so we can’t make that switch.

This is true in most institutions, I'm afraid. In Italy students of different subjects are taught in different courses, so maths students get the Real Thing(TM) and, say, biology students get calculus focused on what they will actually need, with biology oriented examples.
