I saw somewhere that anthologies might be listed under the editor's name. Although, I'd still expect all the authors down as claimants...

Well, often individual authors hold the copyright for their individual stories (a la publicrecords.copyright.gov/detailed-rec...) and that's where I'm confused. Shouldn't all our stories have been filed?

I'm not a lawyer! When you file with the copyright office, there are multiple form choices. You might find your anthology is filed under the editor's name. I don't know if it would do that even if all authors are listed as claimants. Seems a lot of shortcuts have been taken.
